Recipe Notes

Additional Tips

  • For extra flavor and a restaurant-style touch, finish the cooked dal with a second, hot ghee tadka (tempering) just before serving—add sliced garlic and dried red chilies to the hot ghee, let them sizzle, and pour directly over the dal for a fragrant finish.
  • If you prefer a creamier texture, mash half of the cooked moong dal with the back of a ladle before adding the tempering; this gives the dal a velvety mouthfeel perfect for pairing with rice.
  • For a tangier profile, stir in a squeeze of fresh lemon juice or a small spoon of amchur (dry mango powder) after cooking, adjusting to your taste for a bright, fresh lift.
  • To make this recipe vegan-friendly, simply replace ghee with a neutral vegetable oil or coconut oil; coconut oil will also add a subtle South Indian aroma to the dish.
