Thandai as the name suggests, is a cooling drink for summers. It is a milk based drink popularly made during our Indian festival Holi. This cooling summer drink, Thandai has its exotic taste from the blend of Spices, nuts and full fat milk. Thandai, a spiced milk mixture is not only tasty and super healthy but also it has a cooling effect on the body. Lots of nuts like pistachio almonds cashew nuts goes into this but the star player is Almonds, while aromatic spices like fennel, peppercorn and cardamom elevate the flavour of this cooling summer drink, Thandai.Thandai is further mingled with dried rose petals and saffron and topped with crushed pistachio. Ingredients
- 1/2 cup Almonds + extra sliced for garnish
- 1/8 cup Pistachio + extra crushed for garnish
- 1/8 cup Cashews
- 1/8 cup Melon seeds
- 1 tbsp Khus khus
- Saffron strands optional, few for garnish 2-3 for each serving
- 1/2 cup Sugar for medium sweetness
- 1.25 ltr Milk
- 2 tsp Fennel seeds as per taste
- 4 Black pepper corns
- 2 tsp Cardamom powder
- 1/2 cup Water
- 1 tsp Rose petals or few drops of rose extract

Instructions
- You will need some almond slices, crushed pistachios and saffron strands while serving for garnish.
- After soaking time remove the skin of almonds, strain poppy seeds & melon seeds and keep them ready.
- Add the paste to warm milk and mix and again leave on counter, covering with a lid.
- After it cools completely add few drops of rose extract or rose petals and refrigerate for minimum 4 hours.
- Serve the chilled drink with crushed pistachios, sliced almonds and 1-2 saffron strands for each serving.
- Enjoy your Thandai chilled.
