Ingredients
For the Poha
For the Tempering
- 1 tsp Oil vegetable or coconut oil
- 1/4 tsp Mustard Seeds rai
- 1/4 tsp Gram black, split, urad dal
- 1 pinch Asafoetida hing
- 1 sprig Curry Leaves

Prepare the Poha
- Soak the flattened rice (poha/aval) in water for 5 minutes. Drain well and set aside.
Prepare the Tempering
- Heat oil in a small pan. Add mustard seeds and split black gram. Once they splutter, add asafoetida and curry leaves. Sauté for a few seconds until fragrant.
Combine and Serve
- In a bowl, gently mix the drained poha with the yogurt and finely chopped green chilies. Add salt to taste. Stir well to combine. Add the finely chopped cucumber. Gently fold in the prepared tempering. Serve immediately or after chilling for a few minutes. Enjoy!
