Ingredients
For the Poha
- 1 cup Rice ensure it's very thin for best results., flat rice, poha, thin
- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 1-2 Chili Pepper adjust to your spice preference, finely chopped, green
- 1 medium Mango grated, kacha aam, raw
- 1/2 medium Cucumber finely chopped
- 1/2 medium Bell Peppers capsicum, finely chopped, optional
For the Tempering
- 1 tbsp Oil
- 1 tsp Mustard Seeds also known as sarson, rai
- 1/4 tsp Asafoetida hing
- 1/4 tsp Turmeric haldi
- 1 tsp Chickpea split
- 1 tsp Gram black, split, urad dal
- 1/2 tsp Sugar
- 1 tbsp Lemon Juice
- 1 tbsp Peanuts roasted
- 7-8 leaves Curry Leaves
- 2 tbsp Coriander finely chopped
- 1.5 tsp Salt or to taste
Instructions
Prepare the Tempering
- Heat oil in a pan. Once hot, add mustard seeds. When they splutter, add asafoetida, curry leaves, chana dal, and urad dal. Sauté for a few seconds until the dals are lightly browned.
Sauté Aromatics
- Add peanuts and sauté for about a minute. Then, add green chilies, turmeric powder, and salt. Add half of the chopped onions and sauté until softened.
Combine Poha
- Add the poha (flattened rice) to the pan. Mix well and turn off the heat immediately. Do not overcook the poha.
Mix and Serve
- Transfer the poha mixture to a large bowl. Add the remaining chopped onions, tomatoes, grated raw mango, chopped cucumber, bell pepper (if using), sugar, lemon juice, and coriander leaves. Mix gently to combine.
