Ingredients
 

For the Poha

  • 1 cup Rice ensure it's very thin for best results., flat rice, poha, thin
  • 1 medium Onion finely chopped
  • 1 medium Tomato finely chopped
  • 1-2 Chili Pepper adjust to your spice preference, finely chopped, green
  • 1 medium Mango grated, kacha aam, raw
  • 1/2 medium Cucumber finely chopped
  • 1/2 medium Bell Peppers capsicum, finely chopped, optional

Prepare the Tempering

  • Heat oil in a pan. Once hot, add mustard seeds. When they splutter, add asafoetida, curry leaves, chana dal, and urad dal. Sauté for a few seconds until the dals are lightly browned.

Sauté Aromatics

  • Add peanuts and sauté for about a minute. Then, add green chilies, turmeric powder, and salt. Add half of the chopped onions and sauté until softened.

Combine Poha

  • Add the poha (flattened rice) to the pan. Mix well and turn off the heat immediately. Do not overcook the poha.

Mix and Serve

  • Transfer the poha mixture to a large bowl. Add the remaining chopped onions, tomatoes, grated raw mango, chopped cucumber, bell pepper (if using), sugar, lemon juice, and coriander leaves. Mix gently to combine.
