Ingredients
For the Poha Mixture:
- 1 cup Flattened Rice flattened rice, soaked in water for 5 minutes, then thoroughly drained
- 1 medium Potato boiled until tender, then peeled and grated
- 1/2 cup Breadcrumb freshly made or store-bought
- 2-3 Chilies finely chopped (adjust to your spice preference), green
- 1 tsp Dried Fenugreek Leaf dried fenugreek leaves
- 1/2 tsp Chili Powder (adjust to your spice preference), red
- 2 tbsp Lime Juice
- 1/4 cup Coriander finely chopped
- 1 tsp Salt or to taste
- 1 tbsp Rice Flour
For Frying:
- 2 cup Oil canola, for deep frying; vegetable, or peanut oil recommended
Instructions
Prepare the Poha Mixture
- Soak the poha in water for 5 minutes. Drain completely and set aside.
- Boil the potato until tender, peel, and grate.
- In a large bowl, combine the drained poha, grated potato, breadcrumbs, green chilies, kasuri methi, red chili powder, lime juice, coriander, salt, and rice flour. Mix thoroughly until a firm dough forms. Add a tablespoon or two of water if needed to bind the mixture.
Shape the Poha Stars
- Take a small portion of the dough (about a tablespoon), roll it into a ball, and flatten it slightly.
- Use a star-shaped cookie cutter (or a knife to cut out star shapes freehand) to cut out star shapes. Repeat with the remaining dough.
Deep Fry the Poha Stars
- Heat the oil in a deep pan or kadhai over medium-high heat.
- Carefully add the poha stars to the hot oil, ensuring not to overcrowd the pan. Fry in batches if necessary.
- Fry until the poha stars are golden brown and crispy, turning occasionally. This should take about 2-3 minutes per batch.
