Ingredients
 

For the Pakoras

  • 2 cup Rice flattened rice, poha, thin variety is recommended
  • 1 medium Onion finely chopped
  • 1 tbsp Chili Pepper finely chopped, green, or to taste; can substitute with 1 teaspoon ginger paste
  • 1/2 cup Coriander finely chopped
  • 1/4 cup Mint leaves, finely chopped, fresh
  • 1/4 cup Curry Leaves finely chopped
  • 3 tbsp Rice Flour
  • 3 tbsp Gram Flour besan
  • 1.5 tsp Salt or to taste

For Frying

  • Oil as needed, for deep frying (vegetable or canola oil)

Instructions
 

Preparing the Poha

  • Wash the poha thoroughly under running water and soak it in water for 15 minutes. Drain the poha well in a strainer, pressing gently to remove excess water.

Mixing the Ingredients

  • In a large bowl, combine the soaked poha, chopped onion, green chilies, coriander leaves, mint leaves, and curry leaves. Add the rice flour, gram flour, and salt. Mix everything well with your hands until thoroughly combined.

Frying the Pakoras

  • Heat the oil in a deep pan or kadai over medium heat. Once the oil is hot (a small pinch of batter should sizzle immediately), carefully drop small spoonfuls of the poha mixture into the hot oil, ensuring not to overcrowd the pan.
  • Fry the pakoras until they turn golden brown and crispy, flipping them occasionally for even cooking. This should take about 2-3 minutes per batch.

Serving

  • Remove the crispy pakoras from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite chutney or sauce.
