Ingredients
For the Poha
- 3 cup Flattened Rice flattened rice
- 1 1/4 cup Buttermilk thin
For the Tempering
- 3 tsp Oil
- 1/2 tsp Mustard Seeds
- 1 sprig Curry Leaves
- 2 Chillies chopped, green
- 1/4 tsp Turmeric Powder
- 1/4 tsp Asafoetida hing, optional
To Taste
Instructions
- Gently combine the poha and buttermilk in a bowl. Ensure the poha is coated, adding a splash more buttermilk if needed. Avoid fully immersing the poha. This allows the poha to soften slightly without becoming mushy.
- Heat the oil in a broad pan over medium heat. Add the mustard seeds and allow them to splutter. This releases their characteristic nutty flavor. Add the curry leaves and sauté briefly until fragrant.
- Add the green chilies, turmeric powder, and asafoetida (if using) to the pan. Sauté for a few seconds until fragrant. Be careful not to burn the spices.
- Add the buttermilk-soaked poha to the pan. Season with salt. Reduce the heat to low and stir gently until the poha is heated through, non-sticky, and lightly roasted. This should take about 5-7 minutes.
- If desired, stir in sprouts or grated carrot for added nutrition and a pleasant nutty flavor. A teaspoon of sugar can also be added for a touch of sweetness, if preferred.
Recipe Notes
Good To Know
- For extra crunch and flavor, sprinkle roasted peanuts or cashews over the poha just before serving; they pair especially well with the tangy buttermilk base.
- If you prefer a milder tang, soak the poha in diluted buttermilk for just 2-3 minutes, then drain—this helps prevent sogginess while still infusing flavor.
- To make this dish vegan, substitute buttermilk with a mix of coconut milk and a squeeze of lemon juice for a creamy, slightly sour alternative.
Expert Tips
- For a spicier kick, add a finely chopped green chili or a pinch of red pepper flakes to the tempering.
- Customize your poha with other vegetables like finely diced carrots, peas, or bell peppers for added nutrients and color.
- If using thick poha, rinse it under running water for a shorter time to prevent it from becoming mushy.
Storage Instructions
- Leftover poha can be refrigerated for up to a day; reheat gently in a covered pan with a splash of buttermilk to restore moisture and freshness.
