- 1 cup Gooseberry amla, indian gooseberries
- 1 cup Sugar
- 0.5 cup Butter
- 1 tsp Garam Masala
- 1/2 tsp Salt
For Soaking
- Enough Water for soaking
- 1 small crystal Potassium Alum phitkari
Instructions
- Wash the Indian gooseberries thoroughly. Prick the entire surface of each gooseberry with a fork. This helps the gooseberries absorb the soaking liquid.
- In a bowl, soak the pricked gooseberries in enough water to cover them completely. Add a small crystal of potassium alum. This soaking process helps reduce the tartness of the gooseberries.
- After 48 hours, drain the gooseberries and rinse them thoroughly 2-3 times. Transfer the gooseberries to a pot and boil until soft, about 4-5 whistles in a pressure cooker.
- Once the gooseberries are cool enough to handle, remove the seeds and mash them into a pulp.
- Heat the mashed gooseberry pulp in a non-stick pan over medium heat. Stir continuously until the pulp dries out slightly.
- Add the sugar, butter, and salt to the pan. Stir constantly to prevent sticking and burning.
- Continue stirring until the mixture thickens and starts to pull away from the sides of the pan. Add the garam masala and additional butter for a richer flavor. The candy is ready when it becomes non-sticky.
- Remove the pan from the heat and let the candy cool slightly. Once cool enough to handle, shape the candy into small balls or desired shapes. Wrap each candy in butter paper or plastic wrap.
- Store the amla candies in an airtight container. They can be stored for over a year.
