Ingredients
 

Amla Preparation

Spice Blend

Sweetener and Seasoning

  • 200 gm Jaggery alternatively, use brown sugar or maple syrup. adjust to your desired sweetness.
  • 1 tsp Salt
  • 1 tsp Rock Salt optional, for added depth of flavor.

Optional additions

  • 1 tbsp Water add if needed to adjust consistency.
  • 1 tbsp Ghee for enhanced flavour and to prevent sticking (optional)

Instructions
 

Prepare the Amla

  • Steam the gooseberries for 10-15 minutes. Once cool enough to handle, remove the seeds and cut into small pieces.

Blend the Amla

  • In a blender, thoroughly blend the amla pieces into a smooth paste.

Cook the Chutney

  • Heat a non-stick pan or kadhai over medium heat. Add a tablespoon of ghee or oil (optional). Add the amla paste and jaggery. Stir continuously to prevent sticking and burning.

Season and Simmer

  • Add the cardamom powder, red chili powder, black pepper, salt, and rock salt (if using). Continue to cook and stir for 10-15 minutes, or until the chutney thickens to your desired consistency. Add a tablespoon of water if the chutney becomes too thick.

Serve and Enjoy

  • Remove from heat and let the chutney cool slightly. Serve with roti, bread, or as a flavorful side dish. Store in an airtight container in the refrigerator for up to a week.
