Ingredients
Amla Paste
- 1 tbsp Amla Paste see instructions
For the Arbi
- 150 gm Arbi taro root
- 1-2 tsp Salt or to taste
- ½ tsp Turmeric Powder
For the Sauce
- 1 tbsp Mustard Oil
- 1 tbsp Onion Paste
- 1 tbsp Tomato Paste
- 1 tbsp Ginger Paste
- ½ tsp Chili Powder red
- 1 tbsp Coconut grated
For Garnish
- 1 tbsp Coconut grated
Instructions
- First, prepare the amla paste. Combine fresh or frozen amla, garlic, green chilies, and salt in a food processor. Blend until a smooth paste forms.
- Peel the arbi and cut it into bite-sized pieces. Lightly sprinkle with turmeric powder and salt.
- Heat mustard oil in a pan over medium heat. Shallow fry the arbi pieces until they are lightly golden and slightly softened. This helps to seal in their flavor and prevents them from becoming mushy later. Remove the arbi from the pan and set aside.
- In the same pan, add the onion paste, tomato paste, and ginger paste. Sauté for a few minutes until the raw smell disappears and the pastes begin to caramelize slightly.
- Add the red chili powder and grated coconut to the pan. Stir well and cook for another minute until fragrant. This allows the spices to bloom and develop their full flavor.
- Now, add the prepared amla paste to the pan. Stir to combine with the other spices. Cook for a minute or two, allowing the flavors to meld.
- Return the fried arbi to the pan. Gently toss to coat the arbi with the flavorful sauce. Add a little water to create a light gravy. Simmer until the gravy thickens slightly, coating the arbi beautifully.
- Garnish with fresh grated coconut before serving. This adds a touch of sweetness and texture. Serve hot with rice or roti.
