- 500 gm Indian Gooseberries amla
- 6-8 Chilies green
- 2-3 sprigs Curry Leaves
Spices and Flavorings
- 6-8 Chilies dried, red
- 1 Tbsp Chickpeas chana, roasted
- 1 Tbsp Coconut chopped
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- Salt to taste

- 2 Tbsp Mustard Oil
Instructions
- Wash the Indian gooseberries thoroughly. Cut them into pieces and remove the seeds. This step helps to reduce bitterness.
- Heat the mustard oil in a pan over medium heat. Add the mustard seeds and allow them to splutter. This infuses the oil with a nutty flavor. Then, add the dried red chilies and stir for a few seconds.
- Add the roasted chickpeas, chopped coconut, green chilies, roasted cumin seeds, and curry leaves to the pan. Sauté for a minute until fragrant.
- Add the chopped Indian gooseberries and salt. Mix well to combine all the ingredients.
- Transfer the mixture to a blender or food processor. Grind to a coarse paste. For a smoother chutney, blend for a longer time.
- For a longer shelf life, return the chutney to the pan. Cook over low heat, stirring continuously, until the moisture evaporates and the chutney thickens. This step helps to preserve the chutney. If you prefer a fresher chutney, you can skip this step.
- Optional: For a sweeter chutney, add rock sugar or jaggery to taste during the cooking process. This balances the tanginess of the amla.
