Ingredients
Indian Gooseberries
- 250 gm Indian Gooseberries amla
Spices & Flavorings
- 1 tsp Salt kala namak, black
- 1 tsp Chili Powder
- 1/8 tsp Asafoetida hing
- 1 tsp Carom Seeds ajwain, or cumin seeds
- 1-2 tsp Salt or to taste
- 1-2 tsp Jaggery gur
- 1 tsp Mustard Oil
Instructions
- Boil the Indian gooseberries until they are tender. This helps soften the fruit and makes it easier to remove the seeds.
- Once boiled, gently remove the seeds from the gooseberries. Spread the deseeded gooseberries on a plate or tray and allow them to air dry slightly.
- Heat the mustard oil in a pan over medium heat. Add the carom seeds and asafoetida. Sauté briefly until fragrant.
- Add the boiled and deseeded gooseberries to the pan. Sauté for a few minutes, stirring occasionally, until they soften further.
- Add the black salt and chili powder. Continue to sauté, stirring frequently, until any excess moisture evaporates and the gooseberries are coated in the spices.
- Add the jaggery and salt to taste. The jaggery balances the tartness of the amla, while the salt enhances the overall flavor.
- Stir well to combine all the ingredients. Taste and adjust seasonings as needed.
- Allow the Chatpata Amla to cool completely. Once cooled, transfer the relish to a clean glass jar and store in the refrigerator.
