  • Boil the Indian gooseberries until they are tender. This helps soften the fruit and makes it easier to remove the seeds.
    Juicy yellow lemons arranged in a bowl, perfect for recipes, cooking, or garnishing dishes.
  • Once boiled, gently remove the seeds from the gooseberries. Spread the deseeded gooseberries on a plate or tray and allow them to air dry slightly.
  • Heat the mustard oil in a pan over medium heat. Add the carom seeds and asafoetida. Sauté briefly until fragrant.

  • Add the boiled and deseeded gooseberries to the pan. Sauté for a few minutes, stirring occasionally, until they soften further.
  • Add the black salt and chili powder. Continue to sauté, stirring frequently, until any excess moisture evaporates and the gooseberries are coated in the spices.
  • Add the jaggery and salt to taste. The jaggery balances the tartness of the amla, while the salt enhances the overall flavor.
