Halwa Ingredients

  • 1 cup Semolina sooji/rawa, finely ground semolina; roast lightly until fragrant
  • 1 1/2 cup Milk whole milk preferred for richer flavor
  • 3/4 - 1 cup Sugar adjust to your preferred sweetness
  • 6 tbsp Ghee desi ghee recommended for authentic flavor
  • 1 tsp Cardamom Powder ground cardamom; enhances aroma
  • 1/4 tsp Saffron Strands but adds a beautiful color and flavor, optional
  • 1/4 cup Water use only if needed to adjust consistency

Garnish (Optional)

  • 1/4 cup Nuts almonds, cashews - your choice!, chopped, pistachios

Instructions
 

Roasting the Semolina

  • Heat ghee in a heavy-bottomed pan or kadhai over medium heat. Add the semolina and roast, stirring continuously, until it turns a light golden brown and fragrant. This step is crucial for the texture and flavor of the halwa.

Adding Milk and Saffron

  • Pour in the milk and stir well to combine. Add the saffron strands (if using) at this stage. Cook over medium heat, stirring constantly, until the mixture starts to thicken. Add a little warm water if the mixture becomes too dry.

Sweetening and Finishing

  • Stir in the sugar and cardamom powder. Continue to cook and stir until the halwa pulls away from the sides of the pan and forms a thick, smooth consistency. Remove from heat.

Garnish and Serve

  • Garnish with chopped nuts and serve hot. Enjoy!
