  • Heat desi ghee in a heavy-bottomed pan or wok over medium heat. Add the semolina and gram flour, stirring continuously with one hand to prevent lumps from forming. Continue to stir until the mixture turns a light golden brown, about 8-10 minutes.

Making the Sugar Syrup

  • In a separate saucepan, combine water and sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves completely. Reduce heat to low and stir in the cardamom powder. Remove from heat and stir in the milk.

Combining and Finishing

  • Slowly pour the sugar syrup into the semolina and gram flour mixture, stirring continuously to avoid lumps. Add your mixed nuts and dried fruits. Cook for another 2-3 minutes, or until most of the liquid is absorbed and the halwa thickens slightly. The halwa should be thick enough to hold its shape but still soft.

Serving
