Ingredients
For the Halwa
- 1 cup Semolina sooji
- 1/2 cup Ghee use good quality ghee for best flavor.
- 1 cup Sugar granulated sugar is recommended.
- 1 cup Pineapple fresh pineapple, and pureed., cored, peeled
- 1 cup Water
- 1/2 tsp Cardamom Powder
- 1-2 strands Saffron Strands soaked in 1 tablespoon of warm water for 10 minutes to release color and flavor.
For Garnishing
- 1/4 cup Raisins
- 1/4 cup Pistachios sliced
- 1/4 cup Cashews sliced
Instructions
Prepare the Semolina
- Heat ghee in a heavy-bottomed pan or kadhai over medium heat. Add the semolina and roast, stirring continuously, until it turns a light golden brown. This will take about 8-10 minutes. Be careful not to burn it.
Add Pineapple Puree
- Add the pineapple puree to the roasted semolina. Mix well and cook for 2-3 minutes, stirring occasionally.
Incorporate Liquids and Sugar
- Pour in the water and saffron water. Mix well, cover the pan, and cook for another 2-3 minutes until the mixture thickens slightly.
- Add the sugar and stir continuously until it dissolves completely and the halwa starts to thicken. Continue stirring to prevent sticking and burning.
Finish and Garnish
- Stir in the cardamom powder and raisins. Cook for another minute until the mixture is thick and pulls away from the sides of the pan. Remove from heat.
- Garnish with sliced pistachios and cashews. Serve hot or warm.
