Ingredients
For the Filling
- 2 Tbsp Poppy Seeds
- 2 Chilies adjust to taste, finely chopped, green
- 1 Tbsp Onion finely chopped
- 2 Potatoes finely chopped
- 1 tsp Panchphoran (a blend of fennel, and cumin seeds), fenugreek, mustard, nigella
- 1/2 tsp Salt or to taste
For the Ridge Gourd
- 4 Ridge Gourds medium-sized
- 3 Tbsp Mustard Oil
Instructions
- Soak the poppy seeds in warm water for 1 hour to soften them. Then, grind the soaked poppy seeds into a smooth paste.
- In a pan, heat 1 tablespoon of mustard oil. Add the panchphoran and let it sizzle for a few seconds to release its aroma. This enhances the overall flavor profile of the dish.
- Add the chopped onions and green chilies to the pan. Sauté until the onions become translucent, about 3-5 minutes.
- Add the chopped potatoes to the pan. Cook until the potatoes are half-cooked, about 5-7 minutes. This ensures the potatoes will cook through when the ridge gourd is pan-fried.
- Add the poppy seed paste to the pan. If the paste is too thick, add 1/2 cup of water to achieve a smoother consistency. Cook for 5-6 minutes, stirring occasionally, until the mixture is well combined.
- Set the filling aside. Peel the ridge gourds and slit them lengthwise, leaving both ends intact. Create a cavity inside each ridge gourd to accommodate the filling.
- Carefully stuff each ridge gourd with the poppy seed and potato filling.
- Heat a tawa or griddle over medium heat. Add 1 tablespoon of mustard oil. Gently place the stuffed ridge gourds on the tawa.
- Cook for 2-3 minutes per side, or until golden brown and slightly charred. Add a little more oil around the sides if needed to ensure even cooking. Reduce the heat to low and continue cooking until the ridge gourds are tender and the filling is heated through.
- To check for doneness, pierce the ridge gourd with a fork. It should be easily inserted. Cook slightly on all sides to ensure even browning and a pleasant, crispy texture.
