Ingredients
Produce
- 500 gm Ridge Gourd jhinge/turai
- 2 Chillies green
Spice Paste
- 1 tbsp Mustard Seeds black
- 2 tbsp Poppy Seeds
- 1 tsp Turmeric Powder
- 1 tbsp Mustard Oil
- Salt to taste
Instructions
- Wash the ridge gourd thoroughly and peel it. Cut the gourd into bite-sized pieces.
- In a blender or mortar and pestle, combine the black mustard seeds, poppy seeds, green chilies, turmeric powder, mustard oil, and salt. Grind to a smooth paste.
- In a pan or pot, combine the chopped ridge gourd and the spice paste. Mix well to ensure the gourd is evenly coated. Cook over low heat. Ridge gourd releases water as it cooks, so you won't need to add any. This gentle cooking method helps the flavors meld beautifully.
- Continue to cook until the sauce thickens and the ridge gourd is tender. This will take about 10-15 minutes. The thickened sauce will cling nicely to the gourd, creating a flavorful dish.
- Garnish with fresh coriander leaves and serve hot with steamed rice.
