- 200g gm Cottage Cheese fresh, grated
- 100g gm Potato peeled and grated, raw
- 100g gm Bitter Gourd peeled and grated; squeeze out excess moisture, raw
- 100g gm Carrot peeled and grated, raw
- 2 tbsp Peanuts roasted and finely ground
- 1 tbsp Cashews roasted and finely ground
- 1 tbsp Apricots dried, finely chopped
- 2 tbsp Coconut desiccated
- 4-5 Chili Pepper finely chopped, green
- 1/4 tsp Chili Flakes
- 5-6 Basil finely chopped, or tulsi leaves
- 1/4 tsp Cumin ground
- Salt to taste
For Coating & Frying:
- 2 tbsp Cornflakes crushed
- 2 tbsp Breadcrumb
- 1 tbsp Lemon Juice (substitute for lemon drops)
- Oil as needed, for deep frying
Instructions
Prepare the Paneer Mixture
- Combine grated paneer, potato, bitter gourd, and carrot in a large bowl. Add the ground peanuts, cashews, chopped apricots, desiccated coconut, green chilies, chili flakes, basil, cumin powder, and salt. Mix everything thoroughly until well combined.
Shape and Coat the Fritters
- Shape the paneer mixture into small, heart-shaped patties. In separate shallow dishes, place the crushed cornflakes and breadcrumbs. Dip each heart-shaped patty into the cornflakes, then into the breadcrumbs, ensuring they are fully coated.
