Vegetables

  • 1 Onion finely chopped, large
  • 2 Tomatoes finely chopped, medium
  • 1/2 cup Coriander finely chopped (cilantro), fresh
  • 2-3 Chilies finely chopped (adjust to your spice preference), green

  • 2 Eggs
  • 1/2 tbsp Oil vegetable or canola oil
  • 4 slices Bread brown, for serving

Instructions
 

Prepare the Vegetables and Spices

  • Heat oil in a wok or nonstick pan over medium heat. Add the finely chopped onion and cook until translucent.
  • Add the ginger paste and green chilies. Cook until the raw aroma disappears.
  • Add red chili powder, turmeric powder, garam masala, and salt. Stir for a few seconds to combine the spices.
  • Add the finely chopped tomatoes and cook over low heat until softened and mushy. Use a masher to lightly mash the tomatoes.
  • Stir in the chopped coriander.

Cook the Eggs

  • Add the slightly beaten eggs to the pan and keep stirring continuously until small, soft crumbs are formed. This will take about 4-5 minutes. Adjust cooking time for desired doneness.

Serve

  • Switch off the heat. Garnish with extra fresh coriander. Serve hot with brown bread, pav, roti, or naan.
