  • 2 medium Potatoes and mashed, boiled, peeled

For the Egg Mixture

  • 1 large Onion finely chopped
  • 1 large Tomato finely chopped
  • 2-3 Chilies finely chopped (adjust to your spice preference), green
  • 1/2 tsp Cumin Seeds
  • 1 tbsp Coriander finely chopped (optional, for garnish)
  • 2.5 tbsp Oil vegetable or canola oil
  • 1-1.5 tsp Salt or to taste
  • 1 tbsp Butter optional, for richer flavor

Instructions
 

Prepare the Potato and Egg Mixture

  • In a mixing bowl, combine the mashed potatoes and beaten eggs. Mix thoroughly until well combined.

Sauté the Aromatics

  • Heat oil (and butter, if using) in a non-stick pan over medium heat. Add cumin seeds and let them splutter for a few seconds.

Add Vegetables and Season

  • Add the chopped onions, green chilies, and tomatoes to the pan. Sauté for 2-3 minutes until the onions soften slightly.
