Ingredients
For Hard-Boiled Eggs
- 3 Eggs
For the Spice Blend
- 0.5 tsp Mustard Seeds
- 0.5 tsp Cumin Seeds
- 0.25 tsp Fenugreek Seeds
- 0.5 tsp Fennel Seeds
- 0.5 tsp Nigella Seeds kalonji
- 4 Chilies broken, dry, red
For the Achari Sauce
- 3 tbsp Mustard Oil
- 1 medium Onion finely chopped
- 1 tbsp Ginger-Garlic Paste
- 1 medium Tomato finely chopped
- 0.5 tsp Turmeric Powder
- 1 tsp Chili Powder red
- 0.5 tsp Coriander Powder
- 3 tbsp Yogurt plain, thick
- 2 Chilies green, slit
- 1 tbsp Lemon Juice
- Salt to taste
- Water as needed
Instructions
Prepare the Eggs
- Hard-boil the eggs until fully cooked. Peel and make 3-4 slashes in each egg. Set aside.
Prepare the Spice Blend
- Coarsely grind together the mustard seeds, cumin seeds, fenugreek seeds, fennel seeds, nigella seeds, and dry red chilies. Set aside.
Marinate the Eggs
- In a bowl, combine the hard-boiled eggs, slit green chilies, yogurt, prepared spice blend, and salt. Mix well to coat the eggs evenly. Set aside for at least 15 minutes to allow the flavors to meld.
Sauté the Aromatics
- Heat the mustard oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
Add the Spices
- Add the ginger-garlic paste and sauté for 1 minute. Stir in the chopped tomatoes and cook until softened and mushy.
Build the Curry
- Add the turmeric powder, red chili powder, and coriander powder. Cook for 2-3 minutes, or until the oil begins to separate from the sauce.
Simmer the Eggs
- Gently add the marinated eggs to the pan. Stir to coat the eggs with the sauce. Cook for 2-3 minutes on medium heat, stirring occasionally to prevent sticking.
Finish the Dish
- Add enough water to just cover the eggs. Bring to a boil, then reduce heat to low, cover, and simmer for 5-10 minutes, or until the sauce has thickened slightly. Stir occasionally.
Serve
- Remove from heat and stir in the lemon juice. Serve the Achari Eggs hot, garnished with fresh cilantro if desired.
