  • 6 slices Bread your favorite kind
  • 2 tbsp Butter softened

Prepare the Egg Bhurji

  • Heat vegetable oil in a pan over medium heat. Add the chopped onions and cook until translucent.
  • Add the chopped tomatoes and cook until softened and the raw smell is gone.
  • Add the cumin seeds, green chilies, turmeric powder, red chili powder, black pepper (if using), and salt. Stir well and cook for about 30 seconds until fragrant.
  • In a separate bowl, whisk the eggs with a pinch of salt.
  • Pour the whisked eggs into the pan with the vegetable mixture. Stir continuously until the eggs are cooked through and scrambled.
  • Stir in the chopped cilantro.
  • Remove from heat and set aside to cool slightly.

Assemble the Sandwiches

  • Spread softened butter on one side of each slice of bread.
  • Spoon the egg bhurji mixture onto one slice of bread. Top with another slice of bread, butter-side up.

Cook the Sandwiches

  • Grill the sandwiches in a non-stick pan over medium heat until golden brown and the bread is toasted, about 2-3 minutes per side, or until heated through.
