- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 2 Chilies finely chopped, green
- 1/2 tsp Turmeric Powder haldi
- 1/2 tsp Chili Powder red
- 1/2 tsp Cumin Seeds jeera
- 1/2 tsp Pepper black, freshly ground, optional
- 1.5 tsp Salt or to taste
- 2 tbsp Coriander dhania, chopped, for garnish
- 3 tbsp Vegetable Oil
Instructions
Prepare the Egg Bhurji
- Heat vegetable oil in a pan over medium heat. Add the chopped onions and cook until translucent.
- Add the chopped tomatoes and cook until softened and the raw smell is gone.
- Add the cumin seeds, green chilies, turmeric powder, red chili powder, black pepper (if using), and salt. Stir well and cook for about 30 seconds until fragrant.
- In a separate bowl, whisk the eggs with a pinch of salt.
- Pour the whisked eggs into the pan with the vegetable mixture. Stir continuously until the eggs are cooked through and scrambled.
- Stir in the chopped cilantro.
- Remove from heat and set aside to cool slightly.
Assemble the Sandwiches
- Spread softened butter on one side of each slice of bread.
- Spoon the egg bhurji mixture onto one slice of bread. Top with another slice of bread, butter-side up.
