Ingredients
Cucumber Cups
- 2 Cucumbers fresh
Corn Salad Filling
- 1 cup Corn steamed, sweet
- 1 Onion finely chopped, medium
- 1 Tomato seeded and finely chopped
- 1/2 Bell Peppers finely chopped, green
- 1/2 Bell Peppers finely chopped, red
- 1/2 Cucumber finely chopped
- 1 Tbsp Coriander chopped
- 1 Tbsp Lime Juice
- 1 Tbsp Olive Oil
- 1 Tbsp Honey
- 1 tsp Oregano dried
- 1 tsp Jalapeño chopped
- Salt to taste
Instructions
- First, prepare the ingredients. Steam the sweet corn until tender. This can be done in a steamer basket, in the microwave, or even in a pot with a little boiling water.
- While the corn is steaming, finely chop the onion, tomato, green bell pepper, red bell pepper, cilantro, and jalapeño. Removing the seeds from the tomato helps prevent the salad from becoming watery.
- In a medium bowl, combine the steamed sweet corn, chopped onion, tomato, bell peppers, cilantro, and jalapeño.
- Add the lime juice, olive oil, honey, dried oregano, and salt. Toss everything together until well combined.
- Wash the cucumbers for the cups. For a decorative touch, partially peel the cucumbers in stripes, leaving some skin on for visual appeal.
- Cut the cucumbers into thick rounds. Use a small spoon or melon baller to carefully scoop out the seeds and some of the flesh from the center of each round, creating a small well to hold the corn salad.
- Fill each cucumber cup with the prepared corn salad. Arrange the filled cucumber bites on a serving platter.
- Serve immediately and enjoy the refreshing crunch and vibrant flavors!
