- 2 tbsp Lemon Juice
- 2 tbsp Sugar-Free Sweetener (e.g., erythritol), stevia
Instructions
Prepare the Pickled Cucumbers
- In a small saucepan, combine water, white vinegar, sugar-free sweetener, black salt, and table salt.
- Bring to a boil over medium heat.
- Add the finely diced cucumber and cook for 1 minute.
- Remove from heat, drain the cucumbers, and let cool completely.
Make the Cucumber Mint Granita
- Combine the roughly chopped cucumber, mint leaves, black salt, lemon juice, and sugar-free sweetener in a blender or food processor.
- Blend until completely smooth.
- Pour the mixture into a shallow, freezer-safe dish.
- Freeze for 30 minutes.
- Scrape the mixture with a fork to break up ice crystals. Return to freezer.
