- 2 Cucumbers medium, peeled
For the Sweet & Sour Dressing

- 1/2 tsp Chili Flakes optional
- 2 tbsp Lemon Juice
- 1 tbsp Sesame Seeds white
- 1/2 cup Onion finely chopped, red
- 1/2 cup Mango julienned
For Garnishing
- 1/4 cup Cabbage red, shredded
- 10 Mint Leaves

- 2 tbsp Rice Vinegar for extra tang
Instructions
Prepare the Cucumber Noodles
- Attach a julienne blade to a mandoline slicer (or use a vegetable peeler for thinner slices). Set the mandoline to a 1/8-inch thickness setting. Carefully run a cucumber down the blade to create noodles. Rotate the cucumber and continue until you've created noodles from the entire cucumber. Repeat with the second cucumber.
Make the Dressing and Marinate
- In a large bowl, combine the chopped red onion, sugar, chili flakes (if using), and julienned mango. Add the cucumber noodles. Pour the lemon juice and sesame seeds over the mixture. Gently toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
