Instructions

Prepare the Cucumber Noodles

  • Attach a julienne blade to a mandoline slicer (or use a vegetable peeler for thinner slices). Set the mandoline to a 1/8-inch thickness setting. Carefully run a cucumber down the blade to create noodles. Rotate the cucumber and continue until you've created noodles from the entire cucumber. Repeat with the second cucumber.

Make the Dressing and Marinate

  • In a large bowl, combine the chopped red onion, sugar, chili flakes (if using), and julienned mango. Add the cucumber noodles. Pour the lemon juice and sesame seeds over the mixture. Gently toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Assemble and Serve

  • Before serving, add rice vinegar (optional) and give it a final toss. Garnish with fresh mint leaves and shredded red cabbage. Serve chilled. Enjoy!

Recipe Notes

Expert Tips for the Best Cucumber Noodle Salad

  • For extra flavor, marinate the cucumbers in a little salt for 10-15 minutes before adding them to the salad. This helps to draw out excess moisture.
  • Adjust the amount of sugar and chili flakes to your liking. If you prefer a less sweet salad, reduce the sugar. For a spicier kick, add more chili flakes.
  • Feel free to experiment with other vegetables! Add bell peppers, carrots, or snap peas for extra color and crunch.
  • To make this salad ahead, prepare the dressing and vegetables separately. Combine them just before serving to prevent the cucumbers from becoming soggy.
