Ingredients
Salad Ingredients
- 2 English Cucumbers grated lengthwise
- 1/2 Onion thinly sliced, red
- 2 tbsp Spring Onions finely chopped, white and green parts
- 1/4 cup Pine Nuts toasted lightly for enhanced flavor
Honey-Lemon Dressing
- 2 tbsp Buckwheat Honey or your favorite honey
- 1 tbsp Lemon Juice freshly squeezed is best
- 1 tsp Salt to taste
- 1/2 tsp Pepper freshly ground, black
- 1 tbsp Virgin Olive Oil extra

- Whisk together the buckwheat honey, lemon juice, salt, pepper, and olive oil in a small bowl. Set aside.

- Grate the English cucumbers lengthwise and gently squeeze out excess water. This is crucial for preventing a watery salad.
