  • 1 Lemon juice of 1 lemon
  • 2 Chilies finely chopped, green
  • 1 tsp Chili Powder optional, red, to taste
  • 1 tsp Oil for greasing and tempering
  • 1 tsp Seasoning optional, use any pasta seasoning or similar
  • 1 cup Water add more for desired consistency, approximately

Prepare the Batter

  • Mix together the rice flour, all-purpose flour, and semolina in a large bowl. Add salt, cumin seeds, chopped green chilies, and seasoning (if using). Gradually add the yogurt and water, mixing until you achieve a smooth, slightly thick batter. Let the batter rest for at least 1 hour.

Add the Leavening Agent

  • After 1 hour, gently stir in the lemon juice and baking soda. Mix well, ensuring the baking soda is fully incorporated. Let it rest for another 5-10 minutes.

Steam the Dhokla

  • Lightly grease a steamer or dhokla mold with oil. Pour the batter evenly into the prepared mold. Steam for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

Tempering and Serving

  • While the dhokla is steaming, prepare the tempering. Heat oil in a small pan. Add mustard seeds, sesame seeds, and asafoetida. Once the seeds splutter, remove from heat. Pour the tempering evenly over the steamed dhokla. Sprinkle red chili powder (if using). Let the dhokla cool slightly before cutting into squares. Serve warm with tomato ketchup or chutney.
