Prepare the Rice Flour

  • Soak 1 cup of rice for 20 minutes. Wash thoroughly and drain well.
  • Spread the rice thinly on a clean cloth and allow it to dry completely in sunlight (7-8 hours).
  • Grind the dried rice into a fine, smooth powder using a blender or grinder.

Make the Dhokla Batter

  • Dry roast the semolina for a few minutes until lightly fragrant. Let cool.
  • In a large bowl, combine the rice flour and semolina. Mix well.
  • Add yogurt, asafoetida, sugar, salt, and lemon juice. Mix thoroughly.
  • Gradually add water, mixing until you achieve a smooth batter similar in consistency to dosa batter. Let the batter rest for 20 minutes.

Steam the Dhokla

  • Lightly grease a square baking dish or steamer tray with oil.
  • After 20 minutes of resting, gently fold in the Eno fruit salt into the batter and mix well.
  • Immediately pour the batter into the prepared dish.
  • Steam the batter in a preheated steamer for 15-20 minutes, or until a toothpick inserted comes out clean.
  • Allow the dhokla to cool completely before removing it from the dish.

Prepare the Tempering and Serve

  • Heat the oil in a small pan. Add mustard seeds and let them splutter.
  • Add the dried red chili and curry leaves. Fry until fragrant.
  • Cut the cooled dhokla into squares. Pour the tempering over the dhokla pieces. Serve hot.
