Blanch the Greens

  • Blanch green peas, fenugreek leaves, and spinach in boiling water for 5 minutes. Immediately transfer to a strainer and rinse under cold water to stop the cooking process.

Prepare the Green Paste

  • In a blender, combine the blanched vegetables, green chilies, coriander, ginger-garlic paste, and 1 teaspoon of salt. Blend until a smooth paste forms.

Make the Dhokla Batter

  • In a large bowl, whisk together the gram flour, green paste, 1 tablespoon of oil, sugar, lemon juice (if using), and remaining salt. Gradually add water, whisking constantly, until a smooth, pourable batter is formed. The consistency should be similar to pancake batter.

Add Eno and Steam

  • Gently fold in the Eno fruit salt. Do not overmix. Immediately pour the batter into a greased dhokla pan or baking dish.
  • Steam for 7-10 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Demould

  • Allow the dhokla to cool slightly before demoulding. Cut into diamond shapes or squares.

Prepare the Tempering

  • Heat oil in a small pan. Add mustard seeds and let them splutter. Add asafoetida, curry leaves, green chilies, peanuts, and sesame seeds. Sauté for 2 minutes until fragrant.

Garnish and Serve

  • Garnish the dhokla generously with the prepared tempering. Serve warm or at room temperature.
