Ingredients
For the Dhokla Batter
- 1 cup Gram Flour besan
- 1/2 cup Semolina suji
- 1/4 cup Rice Flour
- 1 cup Yogurt curd; use plain, unsweetened yogurt
- 1 tsp Chili Powder red
- 1.5 tsp Salt or to taste
- 1 tsp Baking Soda
- 1 1/4 cup Water may need slightly more or less depending on the consistency of the batter.
For the Tempering
- 2 tbsp Oil
- 1 tsp Mustard Seeds
- 6-8 leaves Curry Leaves
- 1/2 tsp Asafoetida hing
Instructions
Prepare the Dhokla Batter
- In a large bowl, whisk together chickpea flour, semolina, rice flour, yogurt, red chili powder, salt, and baking soda.
- Gradually add water while whisking constantly until a smooth, slightly thick batter forms. Let the batter rest for at least 10 minutes.
Steam the Dhokla
- Lightly grease a 7x11 inch baking dish or similar sized steamer-safe container with oil.
- Pour the batter into the prepared dish.
- Place the dish in a steamer and steam over medium heat for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the dhokla cool completely in the dish for 5-10 minutes before cutting.
Prepare the Tempering
- Heat oil in a small pan over medium heat. Add mustard seeds and let them splutter.
- Add curry leaves and asafoetida; sauté for a few seconds until fragrant.
Finish and Serve
- Cut the steamed dhokla into bite-sized pieces.
- Add the dhokla pieces to the pan with the tempering. Gently toss to coat the dhokla evenly.
