Instructions

Prepare the Dhokla Batter

  • In a large bowl, whisk together chickpea flour, semolina, rice flour, yogurt, red chili powder, salt, and baking soda.
  • Gradually add water while whisking constantly until a smooth, slightly thick batter forms. Let the batter rest for at least 10 minutes.

Steam the Dhokla

  • Lightly grease a 7x11 inch baking dish or similar sized steamer-safe container with oil.
  • Pour the batter into the prepared dish.
  • Place the dish in a steamer and steam over medium heat for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the dhokla cool completely in the dish for 5-10 minutes before cutting.

Prepare the Tempering

  • Heat oil in a small pan over medium heat. Add mustard seeds and let them splutter.
  • Add curry leaves and asafoetida; sauté for a few seconds until fragrant.

Finish and Serve

  • Cut the steamed dhokla into bite-sized pieces.
  • Add the dhokla pieces to the pan with the tempering. Gently toss to coat the dhokla evenly.
  • Serve warm.

Recipe Notes

Expert Tips for Perfect Instant Dhokla

  • For extra fluffiness, let the batter rest for at least 15-20 minutes after mixing all ingredients.
  • Ensure your steamer is well-heated before steaming the dhokla to prevent it from becoming dense.
  • Don't over-steam the dhokla. Over-steaming can lead to a rubbery texture. Check for doneness with a toothpick.
  • Adjust the amount of red chili powder according to your spice preference.
