  • In a bowl, whisk together the gram flour, semolina, and water until smooth. Ensure there are no lumps. The batter should be a pourable consistency, neither too thick nor too thin.

  • Add the grated ginger, 1 teaspoon of sugar, salt, and lemon juice to the batter. Whisk well to combine.
  • Cover the bowl and let the batter rest for 20 minutes. This allows the semolina to hydrate and the batter to become light and airy.
  • Lightly grease a microwave-safe dish with oil. Just before microwaving, whisk the Eno Fruit Salt into the batter. The batter will become frothy. Quickly pour the batter into the greased dish.
  • Gently tap the dish on the counter to level the batter. Cover and microwave on high for 3 minutes.
  • To check for doneness, insert a toothpick or knife into the center. If it comes out clean, the dhokla is cooked. If not, microwave for another minute and let it stand for 2 minutes before checking again.
  • While the dhokla cooks, prepare the tempering. Heat the oil in a small pan. Add the mustard seeds and let them splutter. This releases their aromatic oils.
  • Add the slit green chilies and curry leaves to the tempering. Sauté for a few seconds until fragrant.
  • Pour in the water and 1 tablespoon of sugar. Bring to a simmer and cook until the sauce slightly thickens.
  • Stir in the tomato ketchup. This adds a tangy sweetness to the tempering.
  • Once the dhokla is cooked and slightly cooled, pour the tempering evenly over it. Garnish with fresh coriander. Cut into squares and serve warm.
