Ingredients
Dry Ingredients
- 1 cup Semolina sooji/rava
- 1/2 cup Rice Flour
- 1/2 cup All-Purpose Flour maida
- 1.5 tsp Salt or to taste
Wet Ingredients
- 1.5 - 2 cup Water add gradually until you reach the desired batter consistency.
For the Tempering (Tadka)
- 2 tbsp Oil vegetable or coconut oil
- 1 tsp Mustard Seeds rai
- 1/2 tsp Cumin Seeds
- 2 tsp Peppercorns whole, black
- 3 Chilies finely chopped, green
- 1 tbsp Ginger finely chopped
- 1 Onion medium-sized, finely chopped
- 1 tsp Oil for additional oiling of the dosa
- 1 tbsp Curry Leaves
- 2 tbsp Coriander finely chopped, for garnish
Instructions
Prepare the Batter
- Combine semolina, rice flour, all-purpose flour, and salt in a large mixing bowl. Gradually add water, mixing until a smooth, thin batter is formed. Let the batter rest for 15 minutes.
Make the Tempering
- Heat oil in a small pan. Add mustard seeds, cumin seeds, and peppercorns. Sauté until the seeds splutter.
Add Aromatics
- Add the chopped green chilies, ginger, onion, and curry leaves to the pan. Sauté for 1-2 minutes until fragrant.
Combine and Cook
- Pour the tempering mixture into the batter and mix well. Stir in the cilantro.
Cook the Dosa
- Heat a non-stick tawa or griddle. Pour a ladleful of batter onto the hot tawa, spreading it thinly to form a circle.
Crisp it Up
- Drizzle a little oil around the edges of the dosa. Cook for 2-3 minutes until golden brown and crispy. Flip and cook for another minute.
Serve
