Dry Ingredients

  • 1 cup Ragi Flour finger millet flour; ensure it's finely ground for best results.
  • 1.5 tsp Salt or to taste

Instructions
 

Prepare the Batter

  • Combine 1 cup ragi flour and 1.5 teaspoons salt in a bowl. Mix well and set aside.

Prepare the Tempering

  • Heat 1 tablespoon of oil in a pan. Add 1/2 teaspoon mustard seeds and let them splutter. Add 1 tablespoon chana dal and fry for a few seconds until lightly golden.

Add Aromatics

  • Add 1 finely chopped onion and sauté until translucent. Stir in 1 finely chopped red chili and 1 sprig of curry leaves. Fry for another 30 seconds.

Combine and Adjust Batter

  • Add the tempering mixture to the ragi flour mixture. Gradually add water while mixing until you achieve a smooth batter, similar in consistency to pancake batter. It shouldn't be too thick or too thin.

Cook the Dosa

  • Heat a dosa tawa or non-stick pan over medium heat. Lightly grease the pan with oil. Pour a ladleful of batter onto the hot tawa, spreading it thinly to form a small circle. Cook until the edges lift and the bottom is golden brown. Flip and cook the other side until lightly browned.

Serve

  • Serve hot with your favorite chutneys (tomato chutney and coconut chutney are excellent choices!).

Expert Tips for Perfect Instant Ragi Dosa

  • For a smoother batter, use finely ground ragi flour. Sieving it before use is also recommended.
  • Don't over-mix the batter, as this can make the dosas tough. Mix just until the ingredients are combined.
  • Adjust the amount of water according to the consistency of the ragi flour. Some brands may require more or less water.
  • If the batter is too thick, add a little water; if it's too thin, add a little more ragi flour and mix well.
