Instructions

Prepare the Oats

  • Dry roast rolled oats in a pan or kadai over medium heat until lightly golden brown. Transfer to a plate and coarsely grind using a blender or food processor.

Prepare the Spice Blend

  • Lightly crush cumin seeds and black peppercorns using a mortar and pestle or spice grinder.

Prepare the Vegetables

  • Finely chop the onions and curry leaves.

Combine Ingredients

  • In a large bowl, combine the ground oats, rice flour, all-purpose flour, asafoetida, crushed cumin and peppercorns, chopped onions, curry leaves, and salt. Mix well.

Make the Batter

  • Gradually add water to the dry ingredients, mixing until a smooth, thin batter forms. The consistency should be similar to thick buttermilk. Let the batter rest for 10-15 minutes (optional).

Cook the Dosa

  • Heat a lightly oiled griddle or dosa pan over medium heat. Pour a ladleful of batter onto the hot griddle, spreading it thinly to form a circle. Drizzle a little oil around the edges.

Finish Cooking

  • Cook for 2-3 minutes per side, or until golden brown and crispy. Serve hot with your favorite chutney and sambar or idli chili powder.

Optional Additions

  • You can add finely chopped green chilies along with the onions and curry leaves for extra spice. You can also prepare a plain oats dosa by omitting the onions and green chilies. Feel free to substitute wheat flour for all-purpose flour.

Recipe Notes

Expert Tips for the Perfect Instant Oats Dosa

  • For extra crispy dosas, dry roast the oats for a bit longer.
  • Don't overmix the batter; a few lumps are okay. Overmixing can make the dosas tough.
  • If the batter is too thick, add a little more water. If it's too thin, add a little more flour.
  • Serve immediately for the best texture and flavor. Leftovers can be stored in the refrigerator for a couple of days.
