Dry Ingredients

  • 2 cup Semolina fine-grained semolina, rava, also known as suji
  • 1.5 tsp Salt adjust to taste
  • 1 tsp Baking Soda

Wet Ingredients

  • 4 tbsp Yogurt curd, plain yogurt, also known as dahi, approximately 100g
  • 1 cup Water plus more as needed for desired batter consistency

Other Ingredients

  • 1/2 cup Peas fresh or frozen, matar, green
  • 1 tbsp Oil for greasing the idli molds

Preparing the Semolina

  • Dry roast the semolina in a pan over medium heat until lightly browned. Remove from heat and let cool completely.

Combining Ingredients

  • In a large bowl, combine the cooled semolina, salt, yogurt, and baking soda. Mix well.

Adding Water

  • Gradually add water, about 1 cup at a time, while continuously mixing until you achieve a smooth, slightly thick batter. Add more water if necessary to reach the desired consistency – it should be pourable but not runny.

Resting the Batter

  • Let the batter rest for 10-15 minutes. This allows the flavors to meld and the baking soda to activate.

Preparing the Steamer

  • Fill the idli steamer with 2 cups of water and bring to a boil over medium-high heat.

Greasing the Molds

  • Lightly grease the idli molds with oil.

Filling the Molds

  • Pour the batter into the molds, filling them about ¾ full. Add a spoonful of green peas to some of the idlis for added flavor and color.

Steaming the Idlis

  • Place the filled idli molds into the steamer, cover, and steam for 15-20 minutes, or until the idlis are cooked through and firm to the touch.

Cooling and Serving

  • Once cooked, let the idli steamer cool slightly. Carefully remove the idlis using a blunt knife or spatula. Serve hot with sambar and coconut chutney.
