Instructions

Prepare the Batter

  • Mix the whole wheat flour, all-purpose flour, salt, and asafoetida in a large bowl. Gradually add water, mixing continuously until a smooth, thin batter forms. The consistency should be similar to pancake batter.

Add Vegetables and Spices

  • Stir in the finely chopped green chilies, onions, and cumin seeds. Mix well to ensure all ingredients are evenly distributed and there are no lumps.

Cook the Dosas

  • Heat a lightly oiled non-stick pan or griddle over medium heat. Pour 1/4 cup of batter onto the hot pan, quickly swirling the pan to spread the batter evenly into a thin circle.
  • Add a few drops of oil around the edges of the dosa. Cook for 1-2 minutes, or until the edges begin to lift and the bottom is golden brown.
  • Flip the dosa and cook the other side for another 1-2 minutes, until lightly browned.

Serve and Enjoy

  • Remove the dosa from the pan and serve immediately with your favorite accompaniments, such as sambar, chutney, or a dollop of ghee and sugar.

Recipe Notes

Expert Tips for Perfect Dosas

  • For extra flavor, you can add a pinch of turmeric powder to the batter.
  • If the batter is too thick, add a little more water to achieve the desired consistency. If it's too thin, add a tablespoon of flour.
  • Don't overcrowd the pan with batter; this will prevent the dosas from cooking evenly.
  • Experiment with different fillings! Try adding grated vegetables, paneer, or even mashed potatoes for a unique twist.
