  • Remove the crusts from the bread slices. This ensures a smoother batter.
  • In a blender, grind the bread slices into fine crumbs. Then, add the semolina, rice flour, yogurt, salt, and a little water. Blend until a smooth dosa batter forms, similar to a pancake batter consistency. Add more water if needed to achieve the desired consistency.
  • Heat oil in a small pan. Add mustard seeds and let them splutter. This releases their nutty aroma. Add cumin seeds and urad dal, sautéing until lightly browned. Add green chilies and chopped cilantro, sautéing briefly.
  • Pour the tempering into the dosa batter and mix well. This infuses the batter with flavor.
  • Heat a non-stick tawa or griddle over medium heat. Pour a ladleful of batter onto the hot surface and quickly spread it into a thin, circular dosa. Drizzling a little oil around the edges helps achieve crispy edges.
  • Cook for 2-3 minutes, or until the edges start to brown and the dosa becomes crispy. Flip and cook the other side for another minute or two until golden brown. The dosa should be cooked through and slightly crisp.
