  • Red Pumpkin - 1+1/2 cup cubes 300 grams
  • Onion - 1/2
  • Garlic - 3 cloves
  • Ginger - 1/2 inch knob
  • Vegetable stock - 2 cups 500 ml (Refer notes)
  • Salt if required
  • Black pepper powder to garnish
  • Parsley sprigs to garnish
  • Fresh cream or creme freshe - 1/2 teaspoon to garnish
  • Pumpkin seeds - 1 teaspoon to garnish


  • Heat oil in a pan and once hot add in finely chopped onion, garlic and ginger, saute till lightly golden and no raw aroma remains.

  • Now add in the pumpkin cubes along with the vegetable stock and mix well.

  • Pressure cook on high for 4 whistles, then switch off the gas and allow the cooker to cool down.
  • Open the lid and puree the mixture to a smooth consistency.

  • Check for salt and add a little if required.
  • Pour out into two serving bowls, garnish with toppings of choice and Serve Hot!


Use a vegetable stock cube and dissolve it in hot water, your stock is ready to be used.
