About this Recipe

This is my next recipe in my regime to weight loss. I am a very inquisitive person when it comes to food so i keep exploring different type of foods & keep experimenting with them. Quinoa is one such food i found out to be very interesting & comfortable. Its easy to cook & the wide variety it offers to the people of any taste, be it sweet or spicy Quinoa taste superb every way. If you need to go for a tasty protein packed dish, serve it hot or cold, this recipe is your sure short pick!!!

Ingredients & Quantity
  • 1 cup quinoa
  • 1/2 cup yellow bell pepper, cubes
  • 1/2 cup red bell pepper, cubes
  • 1/2 cup capsicum, cubes
  • 1/4 cup peanuts
  • 1/4 cup green peas
  • 2 green chilies, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup tomato, chopped
  • 1/2 cup tofu, cubes
  • salt to taste
  • 1 tbs olive oil
  • 1 tbs lemon juice
  • Parsley for garnishing
How to cook?
  1. In a big pan boil 5 cup of water, when starts boiling put quinoa, pinch of salt and let it boil for 15 mis
  2. Strain the quinoa & keep it as side.
  3. Now in a wok put some oil & roast peanuts, when it turns brown add green chili.
  4. When the chilies start crackling, add onion & saute till it gets golden. Now add all three bell peppers, tomato, green peas & tofu, saute it for 5 mins.
  5. Now add Quinoa & mix well
  6. Add salt as per your taste, squeeze lemon & garnish with parsely
