Ingredients
For the Radish Filling:
- 500 gm Radish grated, mooli
- 1-2 Chili finely chopped; adjust to taste, green
- 0.5 tsp Garam Masala
- 0.25 tsp Cumin Seeds
- 1 tsp Salt or to taste
- 1 tbsp Oil for sautéing the filling
For the Dough:
- 3 cup Whole Wheat Flour atta, whole
- 2 tbsp Oil for the dough
- 3/4 - 1 cup Water as needed to make the dough
- 1 tsp Salt for the dough
For Serving (Optional):
- Boondi Raita spicy/kara boondi raita
- Tomato Ketchup
Instructions
Prepare the Radish Filling
- Peel and grate the radish. Squeeze out excess water thoroughly. Finely chop the green chilies.
- Heat 1 tbsp of oil in a pan. Add cumin seeds, and let them splutter. Add the grated radish, garam masala, green chilies, and salt. Sauté until the radish is dry and slightly softened.
Make the Dough
- In a large bowl, combine the whole wheat flour and salt. Make a well in the center and gradually add water, mixing to form a soft dough.
- Add 2 tbsp of oil to the dough and knead for 5-7 minutes until smooth and elastic. Cover and let it rest for at least 15 minutes.
Assemble and Cook the Parathas
- Divide the dough into medium-sized balls. On a lightly floured surface, roll each ball into a circle.
- Spoon some of the radish filling onto the center of each circle.
- Gently fold the dough over the filling, sealing the edges tightly. Roll out the stuffed dough into a slightly thinner circle.
- Heat a griddle or flat pan over medium heat. Cook the paratha on both sides, brushing with oil as needed, until golden brown and cooked through.
- Serve hot with boondi raita or tomato ketchup, or your favorite accompaniments.
