Ingredients
Dough
- 1 cup Whole Wheat Flour whole
- 1/2 cup Oats ground
- 1/4 tsp Carom Seeds ajwain
- 1 1/2 tsp Salt or to taste
- 1 cup Water
- 2 tbsp Oil
Instructions
- In a large bowl, combine the whole wheat flour, ground oats, carom seeds, and salt.
- Gradually add water while mixing to form a soft, pliable dough. Kneading for 5-7 minutes will develop gluten and create a more elastic dough, resulting in softer rotis.
- Cover the dough and let it rest for 15 minutes. This allows the gluten to relax, making the dough easier to roll.
- While the dough rests, prepare the filling by combining the grated radish, chopped cilantro, and green chili in a bowl.
- Divide the dough into equal-sized balls. Roll each ball into a thin, round circle on a lightly floured surface.
- Place a spoonful of the radish filling onto the center of one circle. Top with another dough circle and seal the edges by pressing firmly.
- Heat a lightly oiled griddle or tawa over medium heat. Cook the roti for 2-3 minutes per side, or until golden brown spots appear and the roti is cooked through. Adding a little oil while cooking helps create a crispy texture.
- Serve the hot Oats and Mooli Roti with yogurt or your favorite pickle.
Recipe Notes
Good To Know
- If your grated radish releases a lot of water, squeeze out the excess before adding it to the dough to prevent it from becoming too sticky and difficult to roll.
- For extra flavor and a nutritional boost, add finely chopped green chilies, fresh coriander, or a pinch of roasted cumin powder to the dough.
- To make the rotis even softer, cover them with a clean kitchen towel as soon as they come off the pan, trapping steam and preventing them from drying out.
- Leftover rotis can be reheated on a hot tawa or wrapped in foil and warmed in the oven; they also make a great base for quick wraps when filled with paneer or spiced veggies.
Expert Tips
- For a richer flavor, use a combination of white radish and daikon radish.
- Don't overwork the dough, as this can make the rotis tough. Mix until just combined.
- Cook the rotis over medium heat for even cooking and to prevent burning.
Storage Instructions
- Store leftover rotis in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 4 days.
