Instructions

  • In a large mixing bowl, combine the grated and squeezed radish, whole wheat flour, flaxseed powder, onion seeds, chopped green chili, chopped coriander, pickle oil, and salt.
  • Mix the ingredients thoroughly until a smooth dough forms. Knead the dough for a few minutes until it becomes soft and pliable.
  • Divide the dough into equal-sized balls. On a lightly floured surface, roll each ball into a thin, circular paratha using a rolling pin.
  • Heat a flat griddle or tawa over medium heat. Place a paratha on the hot tawa and cook for about a minute per side, or until small bubbles start to appear.
  • Drizzle a little oil on the paratha and flip it over. Cook the other side until light golden brown spots appear. Applying oil helps achieve a crispy texture.
  • Flip the paratha again and cook for another minute, pressing gently with a spatula to ensure even cooking. Repeat the process for the remaining dough balls.

  • Serve the hot, soft Mooli Parathas with your favorite pickle or chutney. They are also delicious on their own.

Recipe Notes

Good To Know

  • Be sure to squeeze the grated radish well, or you may have trouble forming the dough.
  • For softer parathas, add a couple of tablespoons of the reserved radish juice back into the dough along with the water.
  • To add extra flavor, include a tablespoon of chopped fresh mint or dill along with the coriander.
  • If making a vegan version, ensure your pickle oil is dairy-free, or substitute with mustard oil.

Expert Tips

  • For a spicier kick, add a pinch of red pepper flakes or a finely chopped green chili to the dough.
  • Radish greens can also be finely chopped and added to the dough for extra nutrients and a subtle peppery flavor.
  • Experiment with different flours! Try a mix of whole wheat and all-purpose flour, or even add a bit of chickpea flour for a nuttier taste.

Storage Instructions

  • Wrap leftover parathas in a clean kitchen towel and store in an airtight container.
  • Reheat briefly on a skillet or over an open flame to restore their softness and warmth before serving.
