  • Combine grated radish, beetroot (if using), carom seeds, coriander seeds, red chili powder, salt, and 1 tbsp oil in a bowl. Mix well.

Make the Dough

  • In a large bowl, combine all-purpose flour, salt, and oil. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth. Cover and let it rest for at least 15 minutes.

Assemble and Cook the Paratha

  • Divide the dough into equal-sized balls. Roll out one ball into a thin circle. Place a spoonful of the mooli filling in the center. Top with another rolled-out circle of dough. Gently press the edges to seal.
  • Dust lightly with flour and roll out the stuffed paratha to a slightly larger circle.
  • Heat a griddle or tawa over medium heat. Cook the paratha on both sides, brushing with a little oil, until golden brown and cooked through.
