Ingredients
Vegetables
- 250 gm Snake Gourd chichinda, peeled and cut into 1-inch pieces
- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 1-2 Chili finely chopped, adjust to taste, green
- 1/4 bunch Coriander fresh, chopped for garnish
Spices & Condiments
- 1 tsp Cumin Seeds
- 1 tsp Cumin Powder
- 1 tsp Ginger Paste
- 1/2 tsp Turmeric Powder
- 1 Chili whole, adjust to taste, red
- 1 tsp Mustard Sauce for serving, kasundi
- Salt to taste
Other Ingredients
- 2 tbsp Coconut Milk
- 2 tbsp Oil vegetable or coconut oil preferred
Instructions
Prepare the Snake Gourd
- Wash and peel the snake gourd. Remove the membrane and cut into 1-inch pieces.
Sauté Aromatics
- Heat oil in a pan. Add cumin seeds and whole red chilies. Sauté until the seeds splutter.
- Add the chopped onions and sauté until lightly browned.
Cook the Curry
- Add the green chilies, chopped tomatoes, turmeric powder, cumin powder, and ginger paste. Stir well.
- Add the snake gourd pieces and salt. Mix thoroughly and cover the pan.
- Simmer for 10-12 minutes, or until the snake gourd is tender.
Finish and Serve
- Stir in the coconut milk. Heat through for a few minutes.
- Serve hot, garnished with fresh coriander leaves. Drizzle with mustard sauce (Kasundi) for extra flavor.
