Ingredients
 

Vegetables

  • 250 gm Snake Gourd chichinda, peeled and cut into 1-inch pieces
  • 1 medium Onion finely chopped
  • 1 medium Tomato finely chopped
  • 1-2 Chili finely chopped, adjust to taste, green
  • 1/4 bunch Coriander fresh, chopped for garnish

Prepare the Snake Gourd

  • Wash and peel the snake gourd. Remove the membrane and cut into 1-inch pieces.

Sauté Aromatics

  • Heat oil in a pan. Add cumin seeds and whole red chilies. Sauté until the seeds splutter.
  • Add the chopped onions and sauté until lightly browned.

Cook the Curry

  • Add the green chilies, chopped tomatoes, turmeric powder, cumin powder, and ginger paste. Stir well.
  • Add the snake gourd pieces and salt. Mix thoroughly and cover the pan.
  • Simmer for 10-12 minutes, or until the snake gourd is tender.

Finish and Serve

  • Stir in the coconut milk. Heat through for a few minutes.
  • Serve hot, garnished with fresh coriander leaves. Drizzle with mustard sauce (Kasundi) for extra flavor.
