Instructions
Prepare the Dough
- Mix whole wheat flour, salt, and oil in a bowl. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth. Cover and let rest for at least 30 minutes.
Make the Filling
- Heat 1 tbsp of butter or oil in a pan. Sauté minced garlic for 30 seconds, then add red pepper flakes and chopped onions. Cook until softened, about 3 minutes. Stir in shredded purple cabbage and cook for another 5-7 minutes until slightly wilted. Season with salt and stir in grated cheese (if using). Set aside to cool.
Assemble and Cook the Paratha
- Divide the dough into small balls. Roll each ball into a 4-inch circle. Place 2 tablespoons of the cabbage filling in the center. Bring the edges of the dough together, pinching to seal, then gently flatten into a round paratha.
Cook the Paratha
- Heat a lightly oiled griddle or large skillet over medium heat. Place the paratha on the hot surface and cook for 2-3 minutes per side, or until lightly browned. Once both sides are cooked, brush with 1 tbsp of butter or ghee and cook for a few seconds per side on high heat to get that crispy finish.
Serve
- Serve the Purple Cabbage Stuffed Paratha hot, optionally with a side of fresh salad or raita.
