Ingredients
Dough
- 2 cup Whole Wheat Flour whole
- 1 1/2 tsp Salt or to taste
- 2 tbsp Ghee melted
- 2 tbsp Yogurt
- 1/2 tsp Carom Seeds ajwain
- Water as needed for kneading
For Serving
- Ghee for drizzling, melted
- Rajasthani Dal Or Any Side Dish
Instructions
- In a large bowl, combine the whole wheat flour, salt, melted ghee, yogurt, and carom seeds.
- Gradually add water, mixing until a soft, pliable dough forms. Kneading helps develop gluten, resulting in softer rotis.
- Cover the dough with a damp cloth and let it rest for 15 minutes. This allows the gluten to relax, making the dough easier to roll.
- Divide the dough into 4-5 equal portions. Each portion should be slightly thicker than what you'd use for a regular roti.
- Roll each portion into a small, round disc, similar to a poori.
- On one side of each disc, make small gashes with a knife. These gashes create the signature Khoba Roti texture and help prevent puffing during cooking.
- Create decorative patterns on the roti using tweezers, a small scissor, or by pinching with your thumb and index finger. Get creative and have fun with it!
- Place the designed rotis on a greased baking sheet.
- Brush the rotis with melted ghee. This adds flavor and helps them achieve a beautiful golden-brown color.
- Bake in a preheated oven at 350°F (175°C) for 12-15 minutes, or until golden brown and cooked through. Alternatively, you can cook them on a lightly greased griddle over medium heat for a few minutes per side.
- Once cooked, drizzle with additional melted ghee for extra richness and serve hot with Rajasthani dal or your preferred side dish.
Recipe Notes
Good To Know
- For extra crunch, bake the rotis until lightly golden and then finish them in a hot skillet with a brush of ghee for a crisp exterior and soft center.
- Create the traditional khoba (indentation) patterns using your fingers, a fork, or even the back of a knife—deeper and more intricate designs help the ghee seep in, intensifying flavor and texture.
- To add a twist, mix finely chopped fresh coriander, roasted cumin, or crushed fennel seeds into the dough for aromatic notes that complement the rustic taste.
Expert Tips
- Use a cast iron skillet for finishing the rotis to achieve optimal crispness.
- Experiment with different fats like clarified butter or coconut oil for a unique flavor profile.
- Serve khoba rotis hot off the skillet with your favorite Indian curries, dals, or chutneys.
Storage Instructions
- Once cooled, khoba rotis can be stored in an airtight container for up to 2 days.
- Reheat them in a preheated oven or on a tawa with a little ghee to restore their crispness before serving.
