- ¾ cup All-Purpose Flour maida
- ¾ cup Wheat Flour atta, whole
- 1 ½ tsp Salt or to taste
- ½ tsp Carom Seeds ajwain

- ½ cup Onion finely chopped
- 1 tsp Chili Pepper finely chopped, green
- ¼ cup Fenugreek Leaves chopped, fresh, methi
- 2-3 tbsp Clarified Butter for cooking, or cooking oil
Instructions
- In a large bowl, combine the chickpea flour, all-purpose flour, whole wheat flour, salt, and carom seeds.
- Add the chopped onion, green chili, and fenugreek leaves to the dry ingredients.
- Gradually add warm water while mixing the ingredients to form a soft, pliable dough. Knead the dough for 5-7 minutes until smooth and elastic.
- Divide the dough into 4 equal portions. Roll each portion into a thin circle (approximately 6-7 inches in diameter) using a rolling pin. Lightly dust the surface with whole wheat flour to prevent sticking.
- Heat a non-stick griddle or tava over medium heat. Place a rolled roti on the hot tava.
- Cook for about 30-45 seconds per side, or until golden brown spots appear. Apply ghee or oil to both sides while cooking for added flavor and a softer texture. This helps create a crispy, flaky roti.
