Ingredients
Dry Ingredients
- 2 cup Millet Flour bajre ka atta
- 1/4 cup Whole Wheat Flour whole
- 1/4 tsp Turmeric Powder haldi
- 1.5 tsp Salt or to taste
Fresh Herbs & Aromatics
- 1 cup Fenugreek Leaves methi leaves, chopped
- 1/4 cup Coriander dhania, chopped
- 1/4 cup Spring Onions chopped
- 1 cup Garlic fresh green garlic, chopped
- 4 clove Garlic regular garlic, finely chopped
Instructions
Prepare the Dough
- Combine millet flour, whole wheat flour, turmeric powder, and salt in a large bowl.
- Add chopped fenugreek leaves, coriander leaves, spring onions, fresh green garlic, and regular garlic to the dry ingredients.
- Mix well to combine all ingredients.
- Gradually add water, mixing until a soft, slightly sticky dough forms. Knead for 5-7 minutes until smooth and elastic.
- Let the dough rest for at least 15 minutes, covered with a damp cloth.
Cook the Flatbreads
- Heat a griddle or flat pan over medium heat.
- Lightly grease your hands with oil.
- Take a small portion of the dough (about the size of a golf ball).
- Gently shape the dough into a small ball, then flatten it into a roughly 5-inch disc using your hands. Do not roll it with a pin.
- Place the disc on the hot griddle.
- Using wet hands, gently flatten the disc further into a thin roti. Work quickly to prevent it from sticking.
- Cook for 1-2 minutes per side, or until lightly browned and cooked through. Flip with a spatula.
- Brush both sides with a little oil during cooking.
Serve
- Serve the Bajre Ki Roti hot with your favorite accompaniments such as coriander chutney, raita (yogurt dip), or lassi (yogurt drink).
