  • In a large mixing bowl, combine the whole wheat flour, ground coriander, cumin seeds, amchur (dry mango powder), turmeric powder, ajwain (carom seeds), and salt.

  • Add the chopped spinach, methi, mint, cilantro, green chilies, and grated ginger to the dry ingredients.
  • Add 1 tablespoon of oil. This helps create softer rotis.
  • Gradually add water while mixing the ingredients together to form a soft dough. Knead the dough for 5-7 minutes until smooth and elastic.

  • Divide the dough into equal-sized balls.
  • On a lightly floured surface, roll each dough ball into a thin, circular roti.
