Ingredients
Greens
- 1 cup Spinach chopped finely
- 1/2 cup Methi Leaves fenugreek, chopped finely
- 1/4 cup Mint Leaves chopped finely
- 1/4 cup Coriander chopped finely
Dry Ingredients
- 2 cup Whole Wheat Flour whole
- 1/4 tsp Coriander ground
- 1/4 tsp Cumin Seeds
- 1/4 tsp Dry Mango Powder dry mango powder
- 1/4 tsp Turmeric Powder
- 1 tsp Carom Seed carom seeds
- 1 1/2 tsp Salt or to taste
Instructions
- In a large mixing bowl, combine the whole wheat flour, ground coriander, cumin seeds, amchur (dry mango powder), turmeric powder, ajwain (carom seeds), and salt.
- Add the chopped spinach, methi, mint, cilantro, green chilies, and grated ginger to the dry ingredients.
- Add 1 tablespoon of oil. This helps create softer rotis.
- Gradually add water while mixing the ingredients together to form a soft dough. Knead the dough for 5-7 minutes until smooth and elastic.
- Divide the dough into equal-sized balls.
- On a lightly floured surface, roll each dough ball into a thin, circular roti.
- Heat a griddle or flat pan over medium heat. Cook each roti for about 1-2 minutes per side, or until golden brown spots appear and the roti puffs up slightly.
- Apply ghee or oil to the cooked roti for added flavor and softness. Serve hot with your favorite accompaniments like pickle, yogurt, or any side dish.
