Ingredients
Dry Ingredients
- 1 cup Wheat Flour whole
- 1 cup Gram Flour besan
- 1/2 tsp Carom Seeds ajwain
- 1 tsp Chili Powder red
- 1/2 tsp Turmeric Powder haldi
- 1 tsp Salt or to taste
For Cooking & Serving
- 1 Tbsp Clarified Butter
- 1 Tbsp Onion chopped
- 1 Chili chopped, green
- 1 tsp Mango Powder amchur, dry
Instructions
- In a large bowl, combine the whole wheat flour, chickpea flour, carom seeds, red chili powder, turmeric powder, and salt.
- Gradually add water while mixing the dry ingredients to form a soft, pliable dough. Knead the dough for 5-7 minutes until smooth and elastic. This develops the gluten, resulting in softer rotis.
- Divide the dough into small, equal-sized balls.
- On a lightly floured surface, roll each dough ball into a thin, circular roti, approximately 6-7 inches in diameter.
- Heat a flat griddle or tawa over medium heat. Place the rolled roti on the hot tawa and cook for about 30 seconds on each side, or until small bubbles start to appear.
- Apply a small amount of ghee or oil to the surface of the roti and flip it over. Cook the other side for another 30 seconds, pressing gently with a spatula. This ensures the roti cooks evenly and puffs up slightly.
- Continue cooking and flipping the roti until both sides are golden brown and cooked through. Remove from the tawa and serve hot with chopped onions, green chilies, dry mango powder, and your favorite curry or chutney.
Recipe Notes
Good To Know
- For extra crunch and flavor, add finely chopped onions, green chilies, and fresh coriander leaves directly into the dough before rolling out the rotis.
- If you prefer a softer texture, knead the dough with a few tablespoons of plain yogurt instead of just water; this also adds a subtle tanginess to the roti.
- To make Missi Roti gluten-free, substitute wheat flour with a mixture of millet flour (like bajra or jowar) and increase the chickpea flour proportion, but handle gently as the dough may be more fragile.
- After cooking, brush each roti lightly with ghee or butter and wrap them in a clean kitchen towel to keep them warm and prevent them from drying out before serving.
Expert Tips
- Don't overwork the dough, as this can make the rotis tough. Mix until just combined.
- For even cooking, ensure your pan or tawa is heated to a medium-high temperature before cooking the rotis.
- Experiment with different spice blends in your dough – add a pinch of garam masala, cumin powder, or ajwain seeds for a unique flavor profile.
Storage Instructions
- Store leftover rotis in an airtight container at room temperature for up to 2 days. For longer storage, freeze them for up to 2 months.
- Reheat rotis on a dry skillet or microwave until warmed through.
